Joule Reopens in Fremont this October
FREMONT – In late October, husband and wife culinary team, Rachel Yang and Seif Chirchi will re-open their much-loved and very popular restaurant, Joule, in the mixed use retail and restaurant project The Fremont Collective at 3506 Stone Way North.
Designed by Heliotrope Architects, the contemporary, urban space offers approximately 36 seats in the restaurant that includes an open kitchen with dining counter and 18 seats at the communal table and bar. Seasonally, Joule will offer outdoor seating for 20. Joule will be open Sunday though Thursday for dinner from 5pm to 10pm, Fridays and Saturdays until 11pm; and Saturday and Sunday for brunch from 10am to 2pm.
Yang and Chirchi are putting their own spin on a Korean steakhouse by riffing off of traditional Korean flavors for an urbane and novel dining experience. Yang and Chirchi’s menu will push preconceived notions of what guests expect when they think of a conventional steakhouse. Diners who have tasted their eclectic and unexpected combinations know Joule to be anything but traditional. Steak options include Beef tartar with spicy cod row and Asian pear; Brisket steak with sweet chili rub and pickled pearl onion; Short rib steak with kalbi with grilled kimchi; and a Petit tender steak with fermented tofu and crispy shallot. A selection of dishes on the menu including Smoked tofu with honshimeji confit and soy truffle vinaigrette; Mackerel with green curry cilantro crust and black currant; and Rice Noodles with shitake and watercress, make for ideal shareable sides.
A stellar list of Washington and Oregon wines and interesting cocktails provide a great match-up with the focus on steak, harmonizing with the robust and diverse flavors of the food.
For weekend brunch, Joule will offer a buffet spread of salads, fruit and pastries alongside entrée choices like Breakfast Porchetta with oatmeal stuffing and sweet chili rub.
Joule’s menu and bar will be a huge draw for diners, especially coupled with the synergy of the other businesses in The Fremont Collective. The modern, vibrant space provides an innovative, casual dining destination for the Fremont neighborhood and includes creative elements like custom, hand-made wallpaper from Seattle’s Electric Coffin Studio. Yang and Chirchi can’t wait to re-introduce the restaurant to their fans. Says Yang, “As Revel’s more grown-up sibling, our new, larger room will be understated, a bit funky and will offer a variety of bold flavors that our guests have come to know and love about Joule. We think having steak as the centerpiece of the menu with lots of fun side dishes will lend itself to sharing and family style dining.”
