Ethan Stowell’s Newest Restaurant Now Open: Goldfinch Tavern at Four Seasons Hotel Seattle

Ethan Stowell and Four Seasons Hotel Seattle are thrilled to announce that Goldfinch Tavern is now open and ready to welcome guests in its newly designed space in downtown Seattle. Led by Chef Joe Ritchie, the restaurant offers simply prepared Pacific Northwest cuisine using the finest local ingredients.
Regional seafood is highlighted on the menu, from a shellfish and raw bar to hamachi crudo with taggiasca olives, horseradish, red onion and chervil to garlic crusted Alaskan halibut. Other upscale classics include the Goldfinch Tavern burger; beet and Dungeness crab salad; king salmon tartare and wagyu eye of ribeye with watercress and porcini mushrooms. The variety allows for several plates to be shared family-style, or one can order as a coursed meal.

Like the cuisine, the cocktail and wine lists are Northwest focused. The center bar anchors the restaurant and the addition of a fireplace in the bar area lends to the warmth of the room. The cocktail menu features a section dedicated to classics, while the house cocktails take local spirits and incorporates them into original concoctions. Fresh ingredients are sourced locally, juices are fresh pressed daily and garnishes are prepared with each order.
Floor-to-ceiling windows give guests views of Elliott Bay, the Seattle Great Wheel and the Olympic Mountains. The restaurant seats 183, including two private dining rooms with space for 16 people in each.
