Kukree is the newest food truck to hit the streets of Seattle in style. With its colorful can’t miss design, Kukree is built upon the concept of fast fine dining, bringing upscale, healthy and delicious food to the plate. Serving “happiness in a bowl”, the truck serves a diverse, ever-changing menu that changes seasonally and spans global cuisines; often featuring dishes typically found in Southeast Asia, the Mediterranean, India and the US.
Behind the menu and in the kitchen is no ordinary chef. Aarthi Sampath recently moved to Seattle to partner with Kukree co-founder Shilpi Gupta. She is the first female Indian Chef to have won Chopped! and recently won Beat Bobby Flay this past March. Sampath honed her skills in India before moving to the US to attend Johnson & Wales University. She then took her culinary career to NYC to the Michelin-starred Junoon as the Chef de Cuisine before moving on to work under Chef April Bloomfield at The Breslin.
Kukree’s diverse menu features items such as:
- ‘BBF’ Biryani – Aarthi’s winning dish from Beat Bobby Flay made with KGB Biryani (a mixture of quinoa, millet and amaranth), chicken, cucumber, mint, yogurt, eggs, mixed vegetables and shallots
- Spring Chicken – Coriander chicken with lentils, KGB grains, asparagus, sunchoke, green harissa and golden raisins
- Hanger Steak – with KGB grains, beans, plantains, Swiss chard, rhubarb and pickles with cilantro chimichurri
- Veggie Upma – with KGB grains, beans, English peas, peppers, potato, Indian herbs, chutney and coconut
Both Gupta and Sampath share the same passion – to bring healthy, wholesome, fine dining quality food to the diner’s plate without compromising on flavor, quality or taste. Ultimately, the duo intends to open a brick-and-mortar shop within the coming year and are developing their recipes and making hungry people happy while searching for the ideal location in Seattle.
