Chef Maximillian Petty Adds Second Restaurant Featuring
Modern American Cuisine and Retail Market

Four years after opening Eden Hill Restaurant Chef Maximillian Petty, and his wife and business partner Jennifer Petty, will open Eden Hill Provisions, an approachable, inviting modern American bistro and retail market serving Chef Petty’s signature inspired cuisine, reimagined for everyday dining. Eden Hill Provisions will open for dinner September 20, with weekend brunch beginning September 28, at 1935 Queen Anne Avenue North, Seattle.

The bistro is Chef Petty’s answer to everyday neighborhood dining with recognizable plates for all ages, as well as cocktails, beer and wine. “We’re excited to grow in the Queen Anne neighborhood, giving two options for dining – an upscale, New American restaurant with tasting menus only at Eden Hill Restaurant, and soon, our casual and comfortable, family-friendly bistro that allows for more frequent dining at Eden Hill Provisions,” said Petty.

The menu will consist of a broad range of new, inventive dishes as well as Petty’s signature creations reimagined with a more casual approach. Some items will carry over from Eden Hill Restaurant’s former a la carte menu, including Cauliflower “Chilaquiles,” where buttermilk soaked cauliflower is dredged in rice flower, deeply fried, and tossed in a housemade roasted jalapeno and honey hot sauce, served over a bed of crunchy curtido with lime crema and creamy manchego cheese to soften the spice. Petty’s signature “Big Max Burger” will also carry over to Eden Hill Provisions, boasting three-week dry-aged chuck ground with bacon, lettuce, cheddar, and secret citrus sauce on challah bread. Parents will also find a dedicated brunch and dinner menu for kids.

Daily dinner rests on Petty’s casual inspired fare, such as Kettle Corn Brussel Sprouts, with deep fried brussel sprouts tossed in a warm coconut caramel, draped with molasses shoulder bacon, and garnished with fresh pea shoots; the Eden Hill Waldorf, a riff off the traditional Waldorf salad and Petty’s signature texture coming into play, with dried honey walnuts for crunch, dehydrated grapes for sweetness (and yes, it’s not a raisin!), and maple verjus for acid; and Sea Scallop Lasagna with tarragon, Dungeness crab beurre blanc, herbed brioche. Petty will also reprise his role as a charcutier, creating housemade charcuterie and salumis for the dining room and for retail.

Beginning September 28, weekend brunch will greet guests with a menu of favorites with modern twists, including playful Crispy French Toast Sticks perfect for dipping in sea buckthorn and lemon curd; Dutch Baby Cakes of poached strawberries and Chantilly cream, with the option to upgrade with foie gras cake batter; an updated Fried Carabineros Shrimp and Grits with kimchi bbq glaze, serrano and poached egg; and Braised Beef Brisket Hash featuring duck fat hash tots, merlot cabbage, broccoli, grain mustard aioli and egg.

Upon entering the restaurant, diners will be greeted with a small retail market area and “to go” burger window. The market will offer housemade provisions of signature foods such as foie gras cake batter, ice cream, pickles, shoulder bacon, hot sauces and sundries including fresh flowers, greeting cards, bottles of wine, and gift baskets. Available for online order and pick-up, the Burger Window will offer the signature “Little Thomas Burger” and “Big Max Burger,” the latter being a favorite secret menu item from Eden Hill Restaurant and a consistently sold out item at the Queen Anne Farmers Market.

Petty selected Seattle’s Best Practice Architecture to transform the space. The updated design puts a fresh spin on the West Crockett and Queen Anne Ave North corner, salvaging wall paneling, shelving and the original walnut wood to convert the space into a comfortable modern American bistro with bright hues of green, tan and pink. Among many exciting renovations, guests will experience a new, approximately 6-seat bar, roughly 28-seat dining area, small front retail area and rollup garage doors connecting the interior to the new, approximately 30-seat exterior dining space.

Eden Hill Provisions will open September 20 for nightly dinner and will open September 28 for weekend brunch, with weekday lunch to follow shortly after opening. The modern American bistro and market will be the second from Chef Maximillian Petty, whose original restaurant, Eden Hill Restaurant recently evolved to tasting menu only on September 5.
