“Having grown up in Hawai’i, I am thrilled to welcome Poke to the Max at Sea-Tac for some of my favorite dishes from home,” said Port of Seattle Commission President Stephanie Bowman. “Poke to the Max is infusing more choice, flavor and aloha for passengers as part of our airport vision.”
This restaurant collaboration between Chef Choy and one of our longtime women- and minority-owned airport concessionaires illustrates the power of economic development through Airport Dining and Retail. Leeann Subelbia is a Seattle food entrepreneur with a legacy working with airport concessions that began in the 1980s. Max Heigh followed in this mother’s footsteps, practically growing up the airport, to now launching Poke to the Max. A true family business, Poke to Max deeps the connection to the Filipino-American and Polynesian community at SEA.
