Introducing Kingfisher and the All-New Café Hitchcock

Brendan McGill and Team Open Market, Wine Bar & Supperclub on Bainbridge Island

BAINBRIDGE ISLAND, October 27th 2025 – The Winslow Way storefront that housed the original Hitchcock restaurant, McGill’s first venture circa 2010, is re-opening on November 15th  as Kingfisher: a market, wine bar, and supperclub.

“Our first trick after closing Seabird was to revolutionize our all-day café and bar, dedicating more space and infrastructure to our ‘everyday foods’ brand,” said Brendan McGill. “We’ve built a menu with something for everyone, pulling from our favorites from the old café, Seabird, and years of pop-ups and special events. We’re proud to make all of this available to our community, focusing on quality, consistency and convenience.”

Indeed, the café renovation has allowed for a broad menu of items for every meal service: mornings are greeted by coffeesmoothiesbreakfast sandwiches featuring fluffy eggs and house-made bacon and sausage, hearty baked egg dishes and melty chocolate chip cookies. Every day from 11-9, a broad menu is on offer (for dine-in at the bar, counter service or take-out from the café) with a new menu of burgers featuring local, dry-aged beef and hand-punched twice-fried frites, a Koji/buttermilk-marinated crispy chicken sandwich, ling cod fish and chips, Café Hitchcock classics like the house-cured and -smoked pastrami on swirled rye shokupan and Cuban-style mojo pork, as well as salads such as the Hitchcobb and Chef’s salad, and the colorful Buddha bowl.

Weekend brunch (11-4 Saturday & Sunday) offers Baywater Shellfish oysters on the half shell, fresh steamed Dungeness crab in dashi/miso/herb beurre blanc, a selection of eggs benedicts, a built bloody mary and bottomless mimosas.

The cafe’s 4-9 menu is a rotating lineup of Pacific Northwestern dinner fare, including Neah Bay King Salmonoysterslobster mushroom mac and cheese, roast meat dishes and classic desserts like creme brûlée and profiteroles.

Walk through the arched doorway from the café into the Kingfisher space and you’ll find yourself immersed in a boutique market that flexes between café seating in the mornings to a sleek wine bar in the evenings.

“Kingfisher, inhabiting our flagship address, represents a new style of restaurant: a multi-use space that operates as a boutique food market, a sleek wine bar, and the home of our most ambitious culinary dreams,” said Brendan McGill.

In the mornings, guests can drop in for freshly-baked breads, fresh flowersorganic produce, house-made grocery itemsferments from the Hitchcock Foods line, and other culinary essentials. Pull up with your coffee, smoothie or breakfast from the Café and browse, stock your larder, or just hang out. The market opens November 15th at 8:00 am.

At 4:00 pm, the wine bar opens up with a selection of wines (focused on organic/biodynamics, natural techniques, small producers and creative expressions), ciderssake and sherry, alongside the sort of small plates that encourage leisurely conversation with a good friend – think oysters on the half shell, ceviche del dia, a selection of roast vegetables dishes from the wood-fired oven, and comforting braises and roasts (in small-plate format) like miso-braised short ribs and giant pacific octopus, Galician-style. Wine bar service will be open Wednesday-Saturday from 4-9 pm and launches November 19th.

In the heart of the space, the upper dining room affectionally known as the cabin, McGill will host weekly ticketed dinners that draw from the season and locale for inspiration and push culinary boundaries, from communal family-style affairs to luxurious prix fixe dinners. The Supperclub is where the Kingfisher team can pull out all the stops in an intimate setting – just 20 seats.

The first season of Kingfisher dinners launches November 30th, with a holiday-inspired menu recalling the nostalgic flavors of traditional family meals, with a dash of ocean liner luxury. The five-course menu features a petit plateau of seafoodsmoked dry-aged duck with with greens and fermented cranberry, clove & orange glazed pork collar from the wood-fired oven, braised beef short ribs “bourguignon” with matsutake and cured foie gras, and a fun play on croque-en-bouche.

Tickets for Kingfisher dinners will be available for $150 per guest for five courses; beverage pairings available for $75 (n/a beverages and a la carte wines/cocktails available as well), and will be released online Saturday, November 15th.
