Bò & Béo: A Vietnamese Steak Night at Ramie

Seattle, WA — Ramie will morph into a Vietnamese steak house on Wednesday, December 17 and Thursday, December 18 for the final two Bò & Béo dinners of the year! 

A collaboration with Preservation Meat Collective, Bò & Béo will showcase premium beef from one cow though the Vietnamese lens of talented chefs Trinh Nguyen, Thai Nguyen and Sean So of Preservation Meat Collective. 

Knox Family Full Blood Wagyu is a breed of cattle raised with exceptional care on the coast of Gold Beach, Oregon. Both of the December dinners will feature meat from one cow that has been broken down, dry-aged for 28 days, and then carefully curated into steaks and specialty cuts and served alongside Southeast Asian-inspired dishes meant to elevate the depth and richness of the beef. 

This dynamic team of chefs hosted Bò & Béo dinners in June and September and were encouraged by enthusiastic guests to host two dinners in December.

“It’s such a fun evening and we’re more than happy to host an additional night,” said Trinh Nguyen. “What an honor to provide this unique opportunity for guests to experience the full expression of a single, carefully raised animal.” 

“We’re thrilled by the excitment around these dinners,” said Thai Nguyen. “The cow we’re featuring for this dinner was finished for a thousand days on feed which allows the beef to develop rich flavor and delicate marbling.”

“Every steak served will be BMS 10+, placing it in the same marbling category at Japanese A5 Wagyu, the highest in the world,” adds Sean So.  

Each night is limited to 50 guests, and reservations are required. Pre-ordering is highly encouraged.

Each of the five sauces will be served with every steak order. Sauces are Mam Nem, Paddy Herbs & Culantro Chimichurri, Black Pepper Crack Sauce, Cambodian Sambal, and Brown Butter Fish Sauce.

Starters include Hollow Bread with whipped butter, local honey and fleur de sel ($6), Oysters on the Half Shell with Champagne mignonette and habanero tabasco ($4), Duck Custard with duck ragout and rau ram ($14), and Bo La Lot with wagyu ground beef, betel leaf, and pork fat ($19).

Sides include Frites with wagyu tallow, Laughing Cow béchamel and housemade ketchup ($10), Sautéed Corn with shallots, garlic, mustard frills, and chive blossom ($12), Roasted Asparagus, Okra and Turnips with brown butter fish sauce and roasted garlic ($10), Anchovy Butter Noodles with herb salad and charred lemon ($21), and Fried Rice with housemade XO sauce, garlic, chives and egg ($14).  

Guests can enjoy a selection of cognac-inspired cocktails crafted to enhance the luxurious feel of the night. There will also be a cognac pairing offered to complement the rich umami found in each dish.
