Meet Jason Brzozowy
Jason’s interest in food began at a young age from watching Jacques Pepin, Julia Child, and “Great Chefs, Great Cities” on PBS. Originally from Milwaukee, he briefly attended the University of Wisconsin before he moved to Chicago to pursue a career as a chef. After graduating from culinary school, he worked in several Chicago restaurants before moving to Seattle in 2007. He was quickly promoted to Tilth Chef de Cuisine. In 2012, he assisted in the opening of Maria Hine’s third restaurant, Agrodolce, and assumed the role of Executive Chef of Maria Hines Restaurants.
What inspires you?
In Seattle, the seasons and the farmers markets. We’re fortunate that Seattle very clearly reflects the change of seasons.
Also, in the age of so much social media, it’s hard not to be inspired by the work of other chefs. It’s easier and more accessible than ever to share recipes, ideas, and pictures. I like that chefs have embraced the opportunity to push each other and get better.
What is your dream?
My dream when I started cooking was to be a chef and to be able to express my creativity through food. I’m fortunate that I have the opportunity to execute on that dream at three different restaurants.

If there is anything in the works I’m not ready to hear about it! My current position is challenging in ways that I could never have imagined. I’m too busy embracing the trials and rewards that come with my current position at the moment!
