“Rendition” Opens in Tukwila Offering Classic American Favorites and a Spacious Bar

Rendition, a new restaurant and bar in Tukwila, is opening today, September 9. Located on the ground floor of Hotel Interurban, it will offer approachable twists on American classics in a sophisticated urban hangout. The refined restaurant will feature an inviting dining room, a spacious bar, a large outdoor patio with firepit, and vibrant artwork. 

Rendition is managed by Columbia Hospitality and the food and beverage team lead by Michael Felso, Hotel Manager, who develops all food and beverage programming at Hotel Interurban, in addition to overseeing catering and private events. The team has crafted a dynamic menu of small plates, perfect for guests to explore through the culinary options. Dinner highlights will include graze boards, hibachi skewers of braised pork belly, marinated tiger prawns and dry-aged steaks, which are aged up to 42 days in-house with an artisan level of care. The menu also offers larger plates, including smoked sablefish, fried half-chicken, a Wagyu beef burger and garden pasta. For dessert, the visually stunning, interactive sweets include Thai Bananas Foster flambé, served in a cast-iron skillet with a tableside pour of ginger-infused rum; Berries & Bubbles, with sea salt meringues, macerated berries and Pop Rocks™, served with tableside pour of brut Champagne for a crackling, sensational experience; and Campfire Profiterole, served under a clear glass cloche, cream puffs are lightly smoked with apricot crème and dark chocolate mousse with activated charcoal that releases smoke when the cloche is lifted. 

The brunch menu will feature signature dishes such as the Eggs Benedict, Smoked Salmon Hash, Donut French Toast, and Banana Pancakes. The beverage specials will include the restaurant’s rendition of a specialty Bloody Mary mix, featuring toppings like celery, olives and bacon; and tableside mimosas with a bottle of Champagne for the table and an assortment of juices such as orange, cranberry, peach, and pineapple.  

“Rendition was created for guests and locals alike who are looking for great drinks, approachable food and a lively space to hang out with friends or meet someone new,” said Barbara Rush, General Manager of Hotel Interurban and Rendition. “Our menu complements the atmosphere, featuring classic American dishes with an urban flair, utilizing locally sourced ingredients and perfect for sharing or enjoying yourself.”

Rendition will specialize in aromatic spirit–driven cocktails, regional beers on tap and note-worthy wines from the Pacific Northwest. Featured cocktails will include The Beatnik Situation, with Averna amaro, bourbon tawny port and burnt orange, which is inspired by “The Beatnik Situation” of Seattle’s University District in the 1960’s and the spirit of peaceful protest and social activism. The Thank You Wong Tsoo is the restaurant’s rendition on the classic aviation with empress gin, Luxardo maraschino liqueur, fresh lemon and orange citrate. It is a nod to Wong Tsoo, a Chinese immigrant and Boeing’s first engineer, and the countless contributions of others like him throughout the region’s history. 

The new space will boast a vibrant, inviting, and sophisticated atmosphere, with eye-catching artwork, a selfie wall, trailing foliage from the ceiling, and curated music. During the day, guests can enjoy a bright and  airy vibe, perfect for brunch or lunchtime gatherings. At night, dinner can be savored in a romantically lit dining room or by relaxing fireside on the outdoor patio.

Rendition will be open from 7 a.m. to 10 a.m. and 5 p.m. to 10 p.m. Monday through Friday. On Saturdays and Sundays, the restaurant will be open from 7 a.m. to 1 p.m. for brunch and 5 p.m. to 10 p.m. for dinner. Happy hour will be available from 4 to 6 p.m. and 9 to 10 p.m. daily.

Hotel Interurban is also home to Urban Roast, a neighborhood café that fosters connection, diversity, and cultural beauty. The café serves coffee from Café Avole, founded by a minority-owned local roaster, Solomon Dubie, along with fresh sandwiches, house-made donuts and local bagels daily. Rotating artwork is featured along with a permanent piece from local artist Ari Glass.
