Thompson Seattle, a luxury hotel located in the heart of downtown, has launched daily brunch at their signature restaurant Conversation. Executive Chef Kaleena Bliss recently reimagined the menu, and there is something for everyone. Fan favorites include smoked salmon lox platter; smoked ham melt with bacon, tomato, arugula, cheddar, sourdough, breakfast potatoes; Belgian waffle with fresh peaches and blueberries, Chantilly cream, maple syrup; and a classic benedict with English muffin, smoked ham, hollandaise, breakfast potatoes. A full coffee bar and great selection of boozy breakfast libations round out the menu.
Chef Bliss brings more than 14 years of culinary experience to her role as Executive Chef. Prior to joining Thompson Seattle, she held culinary leadership positions at a trio of restaurants and hotels in Seattle, including James Beard Award-winning Canlis. Prior to Thompson Seattle, Bliss served as executive sous chef for nearly four years at SixSeven at The Edgewater Hotel, as chef de cuisine for three years at Mistral Kitchen in the South Lake Union neighborhood, and sous chef for two years at The Four Swallows on Bainbridge Island.
A Pacific Northwest native who grew up along the Columbia River north of Portland, Chef Bliss always knew she wanted to be a chef – her first word was “eat.” She has since developed her deep passion for cooking and food philosophy through an honest appreciation for how simply the food we eat is intertwined with the areas we inhabit. Her approach to creating and sharing food is rooted in intention and integrity while fresh, local ingredients are allowed to shine.
Beyond Conversation, Bliss oversees the culinary operations of The Nest rooftop lounge, a top destination for locals and visitors alike. Her summer menu features items such as Dungeness crab sliders, Kalbi short ribs, charred sweet corn, watermelon salad, heirloom tomatoes, and a charcuterie and cheese board.
