- To start, poached halibut cheeks with celeriac apple puree, pancetta and thyme vinaigrette; paired with 2015 Roussanne.
- To follow, pork and rabbit mousseline with prune moutarde and pumpernickel; paired with 2014 Metier.
- The third course will feature smoked duck breast with charred endive and olive espuma; paired with 2013 Signature syrah.
- The final course includes braised elk with parsnip gratin, chili cocoa demi and micro radish; 2013 4 Flags Cab Sauvignon.
