- Rogue Creamery Blue Cheese Salad: Butter lettuce, sweet tomatoes, blue cheese crumbles, toasted hazelnuts and fresh pear slices.
- Halibut with Macadamia Nut and Dungeness Crab Stuffing: Oven roasted halibut stuffed with parmesan cheese, mushrooms, onions, roasted macadamia nuts and Dungeness crab accompanied by mashed potatoes, broccolini and a drizzle of macadamia nut beurre blanc.
- Macadamia Nut Chicken: Glazed with citrus-ginger herb marinade and encrusted with macadamia nuts and panko breadcrumbs. Flash-seared and topped with a fresh chutney of tropical fruit and served over Okinawa mashed sweet potato and broccolini.
- White Chocolate Mousse Torte: Passion fruit cream and raspberry puree.
Along with this menu, guests can experience ongoing chef features based on the season’s best from both local and tropical waters, along with market fresh produce and best in class meats. Each weekend, Palisade will feature freshly caught fish flown in just for Palisade from Hawaii such as Opakapaka, Opha and Ahi. The beef selections are individually sourced and trimmed to precise standards that bring out their own unique characteristic and flavor.
As the holiday approaches, Palisade will be hosting its annual Thanksgiving Turkey and Prime Rib buffet and jolly Santa Brunch. The Thanksgiving buffet offers traditional Thanksgiving menu at various seating’s throughout the day. Santa Brunch is fabulous with our signature peppermint chocolate fondue and appearances by Santa! The team is full of spirit this time of year and will be hanging garland and lights as well as Christmas trees in every room at Palisade, including three incredible trees in our foyer.
The great leader in the kitchen is Palisade General Manager Justin Emery, he has devoted the past 20 years in the restaurant and hospitality industry. Passionate about incredible dining experiences and the human connections inspired by food, Emery accidentally discovered his love of this industry while completing his degree in vocal performance at Indiana State University. Today, he oversees the daily operations of Palisade and Maggie Bluff’s, including management of his 150 team members, leadership of his senior management team of nine, finances and, ultimately, a seamless guest experiences between the front and back of house.
